Tie Guan Yin, translated as “Iron Goddess of Mercy,” is named after Guanyin, the Bodhisattva of Compassion — a Buddhist figure who embodies mercy and kindness.
According to legend, a poor farmer discovered a neglected temple with a statue of Guanyin. He began caring for it, sweeping the grounds and lighting incense. Moved by his devotion, Guanyin appeared to him in a dream and revealed the location of a special tea plant. From that bush came Tie Guan Yin, which has since become one of China’s most treasured oolongs.
Brewing Guide:
Use 4–5 g of tea per 100 ml water at about 95 °C. Rinse briefly for 10 seconds and discard the wash. Begin with 10 seconds, then increase gradually: 20, 30, 45 seconds until about a minute, as the leaves unfurl.
For a Western-style cup, use ~2 g per 200 ml water and steep for 2–3 minutes at around 95 °C.
